Title: Leek Soup
Categories: Soup Ethnic
Yield: 6 Servings

1 1/2lbLeeks (about 6 cups) washed, trimmed, and cut into 1 in. pie
3cChicken Broth
2 Apples, peeled and cut into 1/2 inch pieces
1 Potato, peeled and thinly sliced
1/2cOrange Juice
1/2cTomatoes, chopped
1/2cCarrots, thinly sliced
1tbFresh basil OR 1 1/2 t dried
1/2tsCurry Powder
  Salt and Pepper to taste

Combine all ingredients in a soup kettle. Cover and bring to a boil. Simmer 20 - 25 minutes. Remove from heat and cool slightly. Process in batches, in a blender or processor until smooth. Reheat and serve.
